We opened Tonkatsu Toyama here to pursue every detail of this popular Japanese dish—from ingredients and cooking methods to the way it is enjoyed. We carefully select the meat, breadcrumbs, frying oil and rice, then prepare every order individually after it is placed. Guests can watch our experienced cooks at work in the open kitchen.
We blend quality lard and beef fat. Preparing the oil in-house from its solid form gives it a refined, appetizing aroma.
We use two breadcrumb textures and adjust their sugar content to suit each ingredient and produce a golden finish.
Great tonkatsu deserves great rice. We use Niigata-grown Koshihikari rice milled within one week of use for freshness, aroma and texture.
Our miso soup is more than a side dish. A blended miso from Asakusa’s Mankyu Miso shop gives it a refined, deeply savory flavor.
Our original preparation balances sweetness and acidity, combining onion and apple with the familiar depth of traditional Worcestershire sauce.
Aromatic stem wasabi adds clean heat. Pair it with soy sauce for a light Japanese-style way to enjoy tonkatsu.
This salt is slowly fired inside bamboo over charcoal. Its rich flavor and subtly sweet finish pair especially well with cutlets.
